But the transformation that leads to wine is complex, and fermentation is its culmination. For this reason the process is usually divided into three phases:

• Pre fermentation, the set of operations prior to fermentatn
• Fermentation
• Post fermentation, which is the final set of operation

With proper control of these three phases, numerous types of wine may be obtained, each with its own distinctive features. But all the transformations have certain operations in common. The specific operations are the ones that differentiate the various wine-making processes, the ones that are really responsible for the final character of the wine.
